Twenty One

From July, The Hilton Tokyo’s Twenty One restaurant has been helmed by new Chef de Cuisine Mark Steven Hehir. A talented young Australian chef, Hehir is taking the restaurant in a more French-Pacific direction. Having cut his teeth at London’s renowned Dorchester Hotel in London and the Crown Casino in Melbourne, the globetrotting culinarian moved to the World Trade Center Club in Colombo, Sri Lanka. A stint at the Maldives Hilton as Food & Beverage Manager/Executive Chef boosted his interest in Asian flavors and ingredients, leading him to develop a style that is “an interpretation of classic French with an Asian touch.” Try Hehir’s new menus, such as the Chef’s Degustation Evolution Menu of seven miniature courses at Twenty One.
